Indian food!

It has been a rather busy weekend but finally I have some time to blog.

I have a very loving relationship with garlic and ginger and therefor I am a big fan of Indian food.

I often make a stue based on garlic, ginger, curry and coconut milk and the other day I decided to make one of what I had in the kitchen..

Indian-curry stue


5 cloves of garlic
2 cm of ginger
3 tablespoons spoons of hot mango chutney

Around 5 tablespoons of curry
broccoli
1 can of baby mais
400gr Chicken
1 can of coconut milk
2 tablespoons of coconut oil
handfull of koriander


Use a big pot, put the ginger, garlic and curry in the pot along with the coconut oil and let it shimmer at a low heat for 2 minutes, then add the mango chutney and let it shimmer until it looks like a nice paste.
I often put a pinch of cayenne pepper in there as well to get it even more spicy!

Next step is to wash the broccoli and baby mais and put it in the pot with 2 dl of water, let it shimmer for 15 mintues.

Cut the chicken to small pieces and add to the stue with the whole can of coconut milk and let it cook for 20 minutes.

In the end you throw the koriander in and let it boil for the lest two minutes and then serve with some rice on the side.


What better than a cold, dark beer with spicy, indian food?

Internet trouble and Chilli-meatballs with marinara sauce!

Hello ..

I was going to blog yesterday but we had a small problem at home. Seems that because we do not have a TV subscription our internet cannot work, according to Stofa. And since we don't have a TV, we didn't feel like paying 169 DKK a month for nothing just to get the internet so we are now changing providers and have no internet in the mean time -.-

Anyways, We are spending the day at school so I decided to throw in a recipie for one of the dishes we made this Weekend.

Chili-meatballs and marinara sauce. (serves 4 people)

I like to make my own meatballs, the ones you can buy ready-made in the stores often contain loads of extra stuff that I do not care for in my food. Including white wheat which my body just cannot handle.

I usually make meatballs from whatever I have in the kitchen at each time.
This weekend I used this :

450 gr minced meat
1 red chili pepper
2-3 cloves of garlic
1 egg
1 small onion
2 tablespoons Basil
A handfull of fresh parsley
salt and pepper


I chop down the chili, the onion and the parsley and put in a bowl with everything else and mix it together with my hands and make small balls.
Sometimes they are a little wet and then I throw in a little bit of whole wheat, 1/4-1/2 dl.

(Sometimes I also put in oregano, koriander or tabasco sauce)

After that you put them on a pan and cook on each at medium heat until they look nice and brown.
In the meantime I boil some whole wheat pasta and in the end I make some marinara sauce.

What I put in the sauce also depends on what I have at home.
This time I used :

2 cans of diced tomatoes with garlic and oregano
1 small onion
2 cloves of garlic
2 dl of water
2 tablespoons of Basil
1 teaspoon of honey
handfull of fresh parsley
salt and  pepper

I start by chopping the onion and let it shimmer in a pot for a couple of minutes with the garlic on very low heat. then I put in the tomatoes, honey and water and let it cook for about 5 minutes, after that I put in all spices and let it cook for 10 more minutes.

There are many different versions of marinara sauces and in my opnion the longer you let them boil at a low heat, the tastier they are so if you have enough hot plates, let it cook while you prepare everything else.

Now I should really continue studying, but as soon as I get my internet back I will share some more recipies.

Blogging again?

So, I have decided to try blogging again.

I want to see if I can motivate myself to keep experimenting in the kitchen and be physically active if I blog about it.
I started a blog during my stay in Spain last year but it only lasted 4 blogs and then I gave up, so let's see how I will do now.

A lot has changed since my last blog, I finished my amazing stay in Spain, I traveled a lot, finished my thesis, got great working experience during my internship and  snatched up a Swedish guy and moved him with me back to Iceland in July.

After a lovely stay in Iceland we moved  to Aarhus in the beginning of February.
We are all settled in our new apartment and  I've started studying Economics and Business Administration in Aarhus University.

We had a very nice, long weekend with a lot of good food and shopping.


On the menu was : delicious chillimeetballs with marinera souce and wholeweat pasta, tortilla de patatas (finally know how to make it perfect) and a fantastic chockolade cake with wholeweat.
Of course we also had a very nice Sunday brunch.

I will put in a post with the recepie for the tortilla next time I make it, it is simply fantastic.

Now that I have settled in after living out of a suitcase for way to long I am trying to update my make-up collection, slow and steady.
I went by H&M yesterday and took a look at their collection and discovered the Lip-pen which I simply love. Easy to put on and it is very light, perfect for a casual look. I am definitely gonna buy more colors next time I'm there.

it is also very cheap, only 30 DKK

I am not gonna keep it longer this time but I will throw in a perfect exercise video for those days you are too busy/lazy to go to the gym but still want to do a little bit of exercise.

Hola!

So, Almost a week since I blogged so now I actually have some updates :)

I recently found out a friend, Malwina from VIA in Horsens is doing an internship in Fuengirola as well, what a coincidence!
On Friday she went to Malaga to meet up with some friends so I decided to join.
Malaga was super nice, it's a really beautiful city and the nightlife there is nice as well!
Turns out it was Malwina's birthday so we celebrated big time! got to taste some traditional strong wine from Malaga that we took as shots, maybe a few to many!

The first train home to Fuengirola left at 5:30 so decided to take it and sleep at home. Of course we had  a lot to drink so I got tired on the train. I fell asleep and when I woke up I realized the train should have been in Fuengirola 20 minutes ago.
Turns out it stopped there and then went back to Malaga so I had to ride it all the way back and then again to Fuengirola.
3 hours on a train when yo're half drunk - half hung over is not the most fun thing!!
Typical me though!

Saturday was pretty quiet since I was recovering from that trip to Malaga, hopefully we will have another trip like that again :))

Today I found a new place to live. I will move there on Thursday with a Norwegian girl that just moved here so that's exciting.
The apartment is down town, close to the beach and has a roof terrace which is awesome, can't wait to move into the city and experience the life there a little bit more.

I guess everything is turning out great, what seemed to be a horrible start here has actually turned out to be pretty awesome.

I was missing Denmark a bit so I decided to put up a danish photo-wall, love it :)

working

So, I am actually surprised to see how many people checked out my blog so I guess I'll keep on writing.
After these nice 8 vacation days I had here in Spain were over I finally started working.
My first work day was really nice! My bosses are really cool and I like the projects I'll be working on while I stay here. The clinic is also very nice except for how cold it is there, but I guess I'll get used to it though :)

I will definitely improve my danish speaking skills during my stay here since a big part of the clientele is danish and also both my bosses.

After my first day of work on Friday I went up to Mijas, a small cute town in a "mountain" here. it was really cozy. Also walked a bit up the mountain to a little chapel where the view was truly amazing, love how beautiful it is here.
the rest of the weekend was spent drinking beer, learning pool, eating good food and having fun :)

I am definitely liking the life in Spain, both work and personal so it looks like I'm gonna have a nice 4 months here, maybe even longer..

Of course I've started to miss my friends and family and feeling a bit weird not being in Horsens, working in AIESEC and seeing my friends daily but I'm sure I'll get used to it and hopefully I will manage to arrange my vacation to be able to attend Fortius in April <3





 - had to buy some comfortable shoes for all the walking here ..

the adventure takes a turn

So ..

On Thursday I had been  here in Spain for 2 days waiting for my roommate. But it turns out that she isn't coming. And since she won't answer any calls or messages I had to figure something out.
I have to admit I though about giving up and just go home, especially since the last thing I wanted was to be all alone in a new country where I don't know anyone and don't even know the language.
But after a call with my mom and encouraging words from other family members I decided to stop being a baby and figure something out.

A day later I had gotten a room to stay in from a really nice couple and I had met some interns and other people I will be working close too.

These days have been very difficult for a small scared girl like me but also very fun. I've gotten to know some nice people here, checked out the nightlife, some restaurants, downtown Fuengirola and the beach. I've even got an offer to stay in an awesome apartment downtown by the beach with another intern and if that will go through I don't think I could be any happier here.




The place I'm living in now is pretty interesting. it is close to work which is nice but the street up to here is very dodgy so I cannot walk home after dark. I have my own entrance and a bathroom and a small kitchen and I even have two lizard roommates. I wasn't so happy about them in the beginning as I screamed each time I saw them but now I've learned that they actually keep other things away like mosquitoes so I'm starting to appreciate them.

The couple living here is really nice and they have 3 dogs and a lot of birds so I never feel totally alone which is nice :)


This week I will spend just looking around, meeting with the people I've gotten to know, shop and hang at the beach. Maybe I'll even take a trip up to the mountains and do some sightseeing there. Then on Friday I'll start working, can't wait :))

It is beautiful here, especially the sunsets, I have to take more pictures during the week :)
also the awesome weather and heat isn't so bad ;)

First days in Spain

I arrived at Malaga airport yesterday
I was a little nervous since my soon to be roommate was in London and didn't manage to get to Spain to welcome me since she got stuck due to the weather.
I'm lucky enough to have a really nice boss here that picked me up at the airport and took me to a nice Swedish Hostel in Fuengirola which is close to where I'll be living and working,
He also showed me around the area and I got to see where I will be working the next 4 months :)
After arriving at the hostel I took a small walk around Fuengirola which reminded me of why I loved Spain when I was younger.
The narrow streets, beautiful houses and mild weather -> Lovely!


Today I checked out of the hostel, stayed for a few hours in the lobby catching up on Icelandic news and didn't really know what to do since my roommate still hasn't arrived. After a while I built up the courage to ask them to keep my bags and went for a walk.
I took a long walk around the neighborhood, went to the beach, checked out the sales and got myself something to eat. Now I've checked back in at the hostel and haven't heard from my roommate all day.

These first days have been a bit difficult for a anxious person like me but I guess it's just an experience. Hopefully tomorrow I'll my roommate will be here and I'll get to go see my new apartment :)
Until then I'm gonna relax in my room with a bag of chips and some San Miguel ;)
